HEADLINES: February 8, 2015
“We Hit a Home run 9 Dorados, 26 Sierras and lost 2 Wahoo Sunday” This is what JC said after fishing on Sunday and scoring big “ I am the God of Sport Fishing in Cabo, I cast out all the fishing demons last week when I met with my spiritual leader, and I call upon my flock to do and say what JC says” He went on to say he was meant for this moment and all the stars had to be aligned perfectly for this great fishing moment he had on Sunday. I think he has gone off the deep end again, every week its something?. Last week was casting out demons, 2 weeks ago it was that Cal Worthington and his dog spot routine. Lets just get to the report JC!!!
Jc Sportfishing Charters is a family owned and operated business and has been fishing in Cabo San Lucas for the past 18 years. Jerry, explains that his charter business is geared more for families and novice anglers, making sure everyone who charters a boat with him have a great time and lots of fun. We welcome families, and groups. We want everyone who fishes with us to take all the sites in and have a memorable experience. This is what is most important to us. We have and do a few tournaments each year and can cater to fisherman who might be interested in tournament fishing. Well lets get on with the fishing report for this past week.
WEATHER:Flat seas and nice weather and it kind of reminds me of lake fishing its been that nice. It has been looking pretty good most of the week, but we did have some cloudy days at the first part of the week and by mid week it had got mostly sunny skies with highs in the mid 80,s and lows dropping down to lower 60,s. No rain this week, but we did get some last week. Still very mild temperatures for this time of year in Cabo.
WATER: Pretty much throughout our fishing grounds, we are having water temperatures between 71 and 74 degrees and even up in the Sea of Cortez its actually cooler than around Cabo. Weird year this year as far as the water goes, it should be cooler by now and warmer up inside Sea of Cortez but it is reverse. Check out the link below and look over conditions for yourself.

BILLFISH: The fishing sure is unpredictable, we have had people fishing all week and it was super good at times. Marlin fishing has been pretty slow but we are catching a few and there was even a couple Blue Marlin caught this week. Most of the Marlin has been caught up and around the Light House to Margarita using lures. A few striped Marlin around, but not in huge numbers, mostly a hit and miss scenario. Wish I could report more of a productive week for Marlin in general, but its that time of year.
DORADO: Good, Good and super Good is how I am describing Dorado fishing this week. We fished at first light one day at the Light House and hit 3 Dorado on lures and one was around 45lbs and then we ran up the beach about 14 miles to Margarita and found a school of Dorado and started pitching live bait along with ballyhoo. We knocked them dead that day and they were all super nice sized fish. It doesn’t end there, we then proceeded up to Ranch Migrion and 50 yards off the beach put on hootchies and got 26 Sierra.What a fun day and some great smoked fish.
WAHOO: A real good week for Wahoo fishing and we are catching them on rapalas, ballyhoo and by slow trolling live bait. Some decent size fish being landed from 20lb to 40lbs and around 150ft to 350ft in depth is where they are in Margarita area.
TUNA: I haven’t heard of a lot of of Tuna being landed this past week. If you do run into them, I think you will have to run offshore about 10 to 25 miles to maybe run into them if you can find a school of Porpoise.
INSHORE: Good inshore fishing, producing good numbers of Sierras, Red Snapper and Dorado from Solmar to the Pump House. Well its about time we are seeing Sierra in good number, but the Yellowtail haven’t showed up much yet as we expect them to get here I hope. The inshore fishing has been really good with al kinds of species being caught not far from shore and even on shore fishing is good.

Pan Fried Sierra!!!
Now you are ready to cook fish as simply as possible: pan-fried. Allow about 6-8 oz. (about 200 grams) per serving, or just eye-ball an amount that looks good for your appetite. For each 6-oz. fillet, prepare 1 tablespoon of flour, seasoned with salt and pepper. Dredge the fish in the flour, coating it well on all sides.
Heat a skillet over medium heat with equal amounts of olive oil and butter . If you are cooking 2 fillets, 1 tablespoon of each is enough. When the butter has stopped foaming, put the fillets in the pan. Allow 8-9 minutes of cooking per 1 inch of fillet thickness. Halfway through cooking, turn the fillets over and cook the other side. Serve with lemon or lime slices and garnish with fresh cilantro. If you want a recipe that is even easier, skip the dredging in flour part. Heat equal amounts of olive oil and butter, season the fillets with salt and pepper, and cook following the same instructions.
If this is still too much work for you, slice the raw fish so thin you can almost see through it, squeeze a few drops of lime juice and sprinkle tamari or soy sauce on the slices, and eat sashimi style. You would only do this with the freshest of fish caught the same day and you only do this with fish you filleted yourself, to avoid contamination at the fish market.
[center]Sierra Ceviche JC Style[/center]
[ul][li]2 lb of any fish you bring back like Sierra Mackerel[/li][li]2 cups of fresh lime juice (bottled is OK but fresh is better)[/li][li]3 cloves of garlic minced[/li][li]2 lb of ripe tomatoes diced[/li][li]1 cup of diced white onions[/li][li]1/2 cup of chopped fresh cilantro[/li][li]1/2 teaspoon of kosher salt[/li][li]1/4 teaspoon of fresh ground black pepper[/li][li]1 or 2 Serrano peppers diced and seeded
(1 if you like it medium, two 2 if you like it spicy, or none if you like it mild)

Cut the fish into 1/2 inch cubes. Place the fish in a glass bowl and cover it with the lime juice. It is important to cover the fish completely with the lime juice. Marinate the fish at room temperature for 2-3 hours.
In a separate bowl mix the tomatoes, onions, cilantro, Serrano peppers and minced garlic. Add salt and pepper mix, cover and set in the refrigerator.
After the fish is finished, rinse in cold water 2- 3 times. Cover the fish with cold water and let stand for 5 minutes. Drain the fish and mix with the tomato mixture. Add more salt and pepper to your taste, serve on crackers or tortilla chips and enjoy.
BEWARE: Please beware of the guys in the street selling boat charters. If you wait till the day you are fishing and go to the dock where your boat is many times people will mislead you to another boat or dock trying to put you on a boat that was not meant for you. You need to have a person guide you to your boat, who is from a reputable charter company. This way there is no confusion or misleading. Please remember when renting Sport fishing boats in Cabo that you rent your boat from reputable and established business. Walk into a fishing fleet office and ask questions about what you are getting and what are the costs? You don't want to rent boats from vendors in the streets and you do not want to book through shady websites offering you the world. Check through travel forums about reputable fishing fleets to deal with. Look for testimonials about the fleet your booking, your charter with. Ask about what will the boat be supplying? Will it include beverages or lunches? How much does it cost to fillet your catch? Check to see if charter boat is insured? Ask about getting your catch smoked? Check cost of a fishing license. These are just a few things to consider when booking your charter boat. We will be talking more about this in the next weeks fishing report.
