well i have some venison to eat up soon , what better way than with my smoker for some fishing time treats . hey , the other guys on the river can stuff there faces with tater chips , i'm eating good for the fish fights , a guys gotta keep his strength up don't he ?

5 lb. ground venison , 2 tsp Mustard seed ,1 lb ground pork ( I use Bob Evan's sausage) , 2 1/2 tsp garlic salt , 5 rounded tsp of Morton's Tender quick salt , 2 1/2 tsp. coarse ground black pepper , a pinch of cyamme pepper and 1 tsp liquid smoke (If desired- I leave out)
Mix all ingredients together well. Knead for about 10 minutes.Cover tightly and refrigerate. Once a day for 3 days knead for 10 minutes. On the 4th day roll into desired size rolls (this can also be stuffed into sausage casings if preferred) and smoke or bake.
I Roll into 1 1/2 lb rolls and smoke in my lil' chef smoker for about 10-12 hours with apple wood . You can also bake in the oven (then I recommend the liquid smoke) at 175 degrees for about 8 hours.
now don't that sound better than tater chips ?
a stew
[size 1]1 lb of venison stew meat 1 pkg egg noodles 1 can of cream of mushroom soup 1 cup of morells take stew meat and mushroom soup and put in pan, put in enough water to cover meat good. Let simmer til meat is good and tender and then put in mushrooms, don't drain it. Then add egg noodles and cook just til noodles are tender.. Serve with mashed taters and enjoy.. I tell ya, there won't be much leftovers if any at all.. this is a good meal .. can simmer all day in crockpot while you are at work if you want a quick fix for dinner[/size]
