Maybe because you are thinking like a person and not a fish.
Big and gaudy flies push (move) a lot of water. That is exactly what baitfish do too. The natural movement of the material mimics fin movement...its very natural. Fish that eat other fish key in on the movement, and once they get closer their lateral line starts to feel the tiny vibrations and motion of the prey and they eat it...It doesn't have to look perfect to work, it just has to move through the water... its that simple.
