What can be hunted year round?

Nearly all of the animals you can hunt year-round are the non-game animals, and nothing you could (or would want to) eat. This includes Jack rabbits, coyotes, red fox, skunks, raccoons (I think) and several others. If they were edible they would be hunted more and need to be more regulated.
Cottontail do have a season, but it is quite a long season. I don't know that I would dare eat them, though. They are really susceptible to worms and other critters infesting them. I guess if I were starving.....
