HEADLINES: November 2, 2015
[center]Here comes the Tuna Jackpot in Cabo!![/center]
Big tuna have been brought to the scales in tournaments last week, good news for anglers in the Nov. 4-7 WON/Yamaha Los Cabos Tuna Jackpot now in its 16th year. It will feature $700,000 in payouts and prizes.
Expected is a field of 150 teams, up from 131 teams, led by last year's champs on the Dona Meche and several other defending champions from last year and previous years battling for the title and the big money.
The tourney is held over four days and is based at the Tesoro Hotel and IGY Marina Cabo San Lucas and will feature two days of fishing, three nightly parties and one Friday morning Charity Charter on the official start boat the luxurious party yacht Cabo Escape. Coupled with the exciting flare gun starts Thursday and Friday, then two weigh-ins that draw three hundred or more onlookers, Cabo will be all about tuna that week, day and night.

Jc Sportfishing Charters is a family owned and operated business and has been fishing in Cabo San Lucas for the past 18 years. Jerry, explains that his charter business is geared more for families and novice anglers, making sure everyone who charters a boat with him have a great time and lots of fun. We welcome families, and groups. We want everyone who fishes with us to take all the sites in and have memorable experience. This is what is most important to us. We have and do a few tournaments each year and can cater to fisherman who might be interested in tournament fishing. Lets get on with the report for this past week.
WEATHER: Not much change in the weather over the last week as it is still pretty nice. The weather really hasn’t been to bad with highs in the mid 80,s and lows going down to low 70,s, so its actually pleasant when we are not getting any sort of tropical weather. I think all storms are behind us for this hurricane season. Luckly we were spared this season and we are grateful as we had a rough year last year with Hurricane Odile. We don’t want any more storms like that ever again.
WATER: Please check out the Tempbreak map link below to get a good idea on water temperatures. Looks as if some of that warmer water has decided to wrap itself up close to the Finger Bank on the pacific side. Not sure how that happened, but as we were thinking that the cool water was coming in from the north would start to overtake that warm water. BILLFISH: Well the Sailfish fishing is still hot and has been for like 2 months. This has been one of the best Sailfish seasons I can remember in the last 20 years. Well, if the Marlin aren’t hitting we can always fall back on the Sailfish which makes for good fishing normally about each time we go out. If you go and fish 1 to 2 miles offshore from the Light House to Margarita using live bait and ballyhoo. There are also lots Striped Marlin around and even a few Blue Marlin.
DORADO: Its been really good is all I can say, lots of Dorado and its off the hook with numerous fish from 30lb to 45lbs being landed consistently all week. As the water begins to cool there some large schools coming into the area and we have proof of that with all fleets reporting good action on Dorado.
TUNA: There has been some Tuna around and they are scattered all over the place. They are also Tuna boats in the area looking for Tuna and really not at a good time as we have the Tuna tournament approaching. We really don’t know what is going with Mexico allowing these commercial Tuna boats to pound the area hard just before we have a tournament which will draw lots of tourist revenue and we know we will be taking nothing close to what these commercial boats will take.

INSHORE: Around the Light House for Dorado has been hot.The inshore action for Tuna and Sailfish inshore has been just ok. The inshore fishing has remained spotty at best a few Marlin have been taken on some of the Pangas from Solmar to the Light House has been good
WAHOO: Our own Bob Marlin did land a 58lbs Wahoo this past week. It didn’t help us in the Bisbee but it was a great catch and good eating for the boys. There are still some Wahoo around and they were being caught on jet heads.

[center]JC,s Fresh Tuna Tacos!![/center]
Serve these tacos with salsa, shredded lettuce, sliced avocado and black olives. Corn and black bean salad finishes the meal—except for dessert.
Ingredients

1/3 cup sour cream
1/4 cup chopped red onion
3 tablespoons chopped cilantro
1 teaspoon minced canned chipotle chilies*
1 8-ounce ahi tuna steak, cut into 3/4-inch pieces
1 tablespoon taco seasoning mix
1 tablespoon vegetable oil
4 taco shells
Preparation
Mix first 4 ingredients in small bowl. Place tuna in medium bowl; sprinkle with taco seasoning. Heat oil in heavy medium skillet over medium-high heat. Add tuna; sauté to desired doneness, about 3 minutes for medium. Reduce heat to medium-low. Stir in sour cream mixture. Cook just until heated through, stirring frequently, about 2 minutes (do not boil). Heat taco shells in microwave 20 seconds. Fill taco shells with tuna mixture.

Pan-Seared Orange Tuna with White Beans!!

Ingredients:

2 tablespoons grated orange zest
2 tablespoons firmly-packed brown sugar
1 tablespoon minced garlic
2 teaspoons ground mustard
1 tablespoon ground cumin
2 teaspoons finely-minced fresh basil leaves
1 tablespoon coarse salt or sea salt
2 teaspoons coarsely-ground pepper
4 (4 to 6-ounce) 1-inch thick sushi quality tuna steaks
2 tablespoons extra-virgin olive oil
1/2 cup fresh-squeezed orange juice
1 tablespoon Champagne or white wine vinegar
2 tablespoons extra-virgin olive oil
4 cups cooked white beans
1/4 cup shredded fresh basil leaves


Preparation:
In a small bowl, combine the orange zest, brown sugar, garlic, mustard, cumin, basil, salt and pepper. Reserve 1 tablespoon of this mixture for seasoning the white beans. Rub the remaining mix on the tuna steaks, coating them well.

In a heavy bottomed sauté pan or a cast-iron pan, warm the olive oil. Increase the heat to high and place the tuna in the pan. Sear for 1 minutes, then turn over carefully, reducing the heat to medium. Sear the other side for 1 more minutes until medium rare. Remove from heat.

NOTE: To grill the tuna steaks - prepare a medium-hot fire for grilling, and brush the grill with oil. Place the grill about three inches above the coals. Grill the tuna for about 3 to 4 minutes on each side for rare, 5 to 6 for medium rare.

In a large saucepan, whisk the orange juice, vinegar, and reserved spices. Bring to a simmer. Add the white beans and basil, tossing well until hot.

Place the beans on a large platter or individual serving plates; drizzle with olive oil. Place tuna steak over the beans and serve.

Makes 4 servings.

JC,s Baja Whiskey a Go Go Drink or Manhattan! [/center]

A well-made Manhattan is a thing of beauty, but a poorly made Manhattan can turn you off cocktails for a while. There are two recommended ways to drink this cocktail: with rye or with scotch. Using scotch turns this drink into a Rob Roy, but that’s just fine. We like those, too. Using bourbon or Tennessee whiskey for this drink is toeing the line into a surefire way to end up with a sickly sweet concoction.

The Manhattan should be a very simple drink: rye, vermouth, and bitters stirred with ice. The herbal notes of the vermouth need a strong spiciness for balance, and the bitters counteract its slight sweetness. When it comes to ordering at a bar, unless you specify, you’ll end up with a sweet, bourbon-based drink. Either specify you want a rye or just go straight for the Rob Roy. At home, play around with this recipe from The Food Network. As with the Old Fashioned, use a Luxardo cherry in place of a neon maraschino cherry.

Ingredients:

Ice
2 parts whiskey
1 part sweet vermouth
1 to 2 dashes bitters, such as Angostura
Orange peel

Directions:
Place ice in a cocktail shaker. Add the whiskey, vermouth, and bitters, and stir well. Rub the orange peel around the rim of the cocktail glass. Strain the drink into the glass. Add 1 or 2 cherries.


BEWARE: Remember if your not renting charter boats from companies who have been established in Cabo for the past 20 years ( Jc sport Fishing, Pisces Sport Fishing, Minervas, Redrum, Picante Fleet) you might have problems. They don't even have an office you can go and confirm your charter boat. You do not want to spend a day walking around looking for the boat and where you board. If you wait till the day you are fishing and go to the dock where your boat is many times people will mislead you to another boat or dock trying to put you on a boat that was not meant for you. You need to have a person guide you to your boat, who is from a reputable charter company. This way there is no confusion or misleading. Please remember when renting Sport fishing boats in Cabo that you rent your boat from reputable and established business. Walk into a fishing fleet office and ask questions about what you are getting and what are the costs? You dont want to rent boats from vendors in the streets and you do not want to book through shady websites offering you the world. Check through travel forums about reputable fishing fleets to deal with. Look for testimonials about the fleet your booking your charter with. Ask about what will the boat be supplying? Will it include beverages or lunches? How much does it cost to fillet your catch? Check to see if charter boat is insured? Ask about getting your catch smoked? Check cost of fishing license. These are just a few things to consider when booking your charter boat. We will be talking more about this in next weeks fishing report.
