Almost Perfect Cheese Sauce Recipe - tubeN2 - 02-01-2006

[ul][li]8 ounces Velveeta, cubed [li]2 tablespoons butter [li]1/4 cup flour [li]2/3 cup milk [li]1/2 teaspoon roasted garlic, minced [li]2 teaspoons chives, chopped [li]1/4 teaspoon ground horseradish [li]Salt, to taste[/li][/ul]
On medium-low heat in a saucepan melt butter and add flour. Whisk flour to blend with butter. Add milk slowly and stir constantly until it is blended and mixture is smooth.
Add cubed cheese, garlic, chives, horseradish, and blend with white sauce. Stir constantly until cheese is completely melted and sauce is smooth. It should have a medium-thick consistency. If sauce is too thick, a little milk may be added.

Makes 2 cups
