THIS WEEK VERY GOOD NUMBERS OF STRIPED MARLIN ON LURES AND PITCHING LIVE BAIT FROM THE LIGHT HOUSE UP TO MARGARITA ROCK. THE WATER TEMPS HAVE BEEN HOLDING GOOD ABOUT 76 TO 78 DEGREES. THE DORADO HAVE SLOWED DOWN QUITE A BIT STILL SOME SHOWING AT RANCHO MIGRINO AND MAGARITA. POZO COTA ON LIVE BAIT & BALLYHOO AND LURES, ALSO DOWNRIGGERS . THE TUNA ARE HARD TO COME BY, THEY ARE OUTSIDE THE JAMIE BANKS. NICE SIZE FISH 30 TO 50LB REALLY GOOD ON THE KITE WITH FLYING FISH YUMMEE LURES. YOU JUST GOT TO BE LUCKY AND FIND THE PORPOISE HOPE THERE HOLDING SOME TUNA. MY BOAT YESTERDAY GOT SOME TUNE 40LB TO 50LB . THE WAHOO ARE HERE AROUND MOST FISH ON RAPPALAS AND LURES, SOME ON SLOW TROLLING LIVE BAIT AT THE GRAY ROCK AND THE LIGHT HOUSE HAS HAVE BEEN PRODUCTIVE .

WE ALSO HAVE BEEN CATCHING SOME DORADO AND MARLIN OFF THE LIGHT HOUSE THE WEATHER IS VERY NICE COME ON DOWN STOP BY JC SPORTFISHING FOR UP TO THE MINUTE FISHING REPORT.

Fish Tacos with Lime-Cilantro Crema
Ingredients
Crema:
1/4 cup thinly sliced green onions
1/4 cup chopped fresh cilantro
3 tablespoons fat-free mayonnaise
3 tablespoons reduced-fat sour cream
1 teaspoon grated lime rind
1 1/2 teaspoons fresh lime juice
1/4 teaspoon salt
1 garlic clove,
minced Tacos:
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon smoked paprika
1/4 teaspoon ground red pepper
1/8 teaspoon salt
1/8 teaspoon garlic powder
1 1/2 pounds red snapper fillets
Cooking spray 8 (6-inch)
corn tortillas
2 cups shredded cabbage

PREPARATION:
Step 1: Preheat oven to 425°.
Step 2: To prepare crema, combine the first 8 ingredients in a small bowl; set aside.
Step 3: To prepare tacos, combine cumin and next 5 ingredients (through garlic powder) in a small bowl; sprinkle spice mixture evenly over both sides of fish. Place fish on a baking sheet coated with cooking spray. Bake at 425° for 9 minutes or until fish flakes easily when tested with a fork or until desired degree of doneness. Place fish in a bowl; break into pieces with a fork. Heat tortillas according to package directions. Divide fish evenly among tortillas; top each with 1/4 cup cabbage and 1 tablespoon crema.

Ingredients
Ice
1 1/2 oz. Sauza Hornitos tequila
Spicy tequila (to taste)
1 oz. Grand Marnier
1 1/4 oz. sweet and sour mix
Paprika
Salt
Sime powder
Serrano pepper

Directions
Begin by adding ice into a pint glass. Pour in an ounce and a half of Sauza Hornitos tequila. Add a splash of spicy tequila and an ounce of Grand Marnier. Add the sweet and sour mix, then shake. Rim the glass with the paprika, salt, and lime powder. Garnish with a slice of Serrano pepper
BEWARE: Please beware of the guys in the street selling boat charters. If you wait till the day you are fishing and go to the dock where your boat is many times people will mislead you to another boat or dock trying to put you on a boat that was not meant for you. You need to have a person guide you to your boat, who is from a reputable charter company. This way there is no confusion or misleading. Please remember when renting Sport fishing boats in Cabo that you rent your boat from reputable and established business. Walk into a fishing fleet office and ask questions about what you are getting and what are the costs? You don't want to rent boats from vendors in the streets and you do not want to book through shady websites offering you the world. Check through travel forums about reputable fishing fleets to deal with. Look for testimonials about the fleet your booking, your charter with. Ask about what will the boat be supplying? Will it include beverages or lunches? How much does it cost to fillet your catch? Check to see if charter boat is insured? Ask about getting your catch smoked? Check cost of a fishing license. These are just a few things to consider when booking your charter boat. We will be talking more about this in the next weeks fishing report.
